Mumbai Ragda Chaat ek aisi chaat hai jo meethi, khatti, teekhi aur creamy—sab flavors ko ek hi plate me la deti hai. Is chaat ka base hota hai ragda (safed matar ki gravy), jise aloo, chutneys aur toppings ke saath assemble kiya jata hai. Ingredients

Ragda ke liye

  • Safed matar (white peas) – 1 cup (overnight soaked)
  • Aloo – 2 medium (boiled & mashed)
  • Onion – 1 medium (finely chopped)
  • Ginger-garlic paste – 1 tsp
  • Green chilli – 1 (finely chopped)
  • Turmeric powder – ½ tsp
  • Red chilli powder – 1 tsp (taste ke hisaab se)
  • Coriander powder – 1 tsp
  • Cumin powder – ½ tsp
  • Salt – taste ke anusar
  • Oil/Butter – 1 tbsp
  • Water – as required
  • Fresh coriander – garnish ke liye

Sweet Tamarind Chutney

  • Imli pulp – ½ cup
  • Jaggery (gud) – ½ cup
  • Salt – pinch
  • Roasted cumin powder – ½ tsp

Green Chutney

  • Fresh coriander – 1 cup
  • Mint leaves – ½ cup
  • Green chilli – 1–2
  • Lemon juice – 1 tbsp
  • Salt – taste ke anusar

Toppings

  • Sev – as required
  • Finely chopped onion
  • Chaat masala – 1 tsp
  • Lemon juice – 1 tsp
  • Nylon sev (optional, extra crunch ke liye)

Method

Step 1: Ragda Banaye

  1. Soaked safed matar ko pressure cooker me namak aur pani ke saath 4–5 whistles tak pakaye.
  2. Cooker khol kar matar ko halka sa mash karein—bilkul smooth nahi, thoda texture rehna chahiye.
  3. Pan me oil ya butter garam karein. Onion sauté karein jab tak translucent ho jaye.
  4. Ginger-garlic paste aur green chilli daal kar ek minute bhunein.
  5. Saare dry masale daal kar halka sa roast karein.
  6. Cooked matar aur mashed aloo add karein. Pani daal kar medium flame par 8–10 minute simmer karein.
  7. Ragda creamy aur thoda thick ho jana chahiye. Fresh coriander se garnish karein.

Step 2: Chutneys Tayaar Karein

  • Meethi chutney: Imli pulp, gud, namak aur bhuna jeera ko medium flame par paka kar thick hone dein.
  • Hari chutney: Saare ingredients ko mixer me smooth grind kar lein.

Step 3: Assembly

  1. Serving bowl me garam ragda daalein.
  2. Upar se chopped onion, meethi chutney aur hari chutney daalein.
  3. Chaat masala, lemon juice aur sev generously sprinkle karein.
  4. Fresh coriander se garnish karke turant serve karein.
