For Dhokla Batter

  • 1 cup curd
  • 1 tablespoon lemon juice
  • 1 teaspoon ginger paste
  • 1 teaspoon green chili paste
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon sugar
  • Water as required
  • 1 sachet fruit salt (Eno)

For Tempering

  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 2 green chilies slit
  • 10–12 curry leaves
  • 2 tablespoons sugar
  • 1/2 cup water
  • 1 tablespoon lemon juice

For Garnishing

  • Fresh coriander leaves chopped
  • Grated coconut

Step-by-Step Method

Step 1: Prepare the Batter

Take a large mixing bowl and add gram flour and semolina. Mix well so there are no lumps. Now add curd, turmeric powder, salt, sugar, ginger paste, green chili paste, and lemon juice.

Slowly add water while mixing continuously to make a smooth batter. The consistency should be slightly thick but flowing. Cover the batter and let it rest for 10–15 minutes.


Step 2: Prepare the Steamer

Meanwhile, prepare a steamer or large pan with water. Grease a steaming tray or cake tin with oil to prevent sticking.

Heat the steamer on medium flame while the batter rests.


Step 3: Add Fruit Salt

Just before steaming, add fruit salt (Eno) to the batter. Sprinkle a little water over it and mix gently in one direction.

You will notice the batter becoming light and frothy. Do not overmix because this helps create soft and airy dhokla.

Immediately pour the batter into the greased tray.


Step 4: Steam the Dhokla

Place the tray carefully inside the steamer. Cover with a lid and steam for about 15–20 minutes on medium heat.

Heat oil in a small pan. Add mustard seeds and allow them to crackle. Then add curry leaves and slit green chilies.

In a separate bowl, mix water, sugar, and lemon juice. Pour this mixture carefully into the tempering pan and let it simmer for a minute.

Switch off the flame.


Step 6: Add Tempering

Cut the dhokla into square or diamond-shaped pieces.

Pour the prepared tempering evenly over the dhokla so that every piece absorbs the flavorful liquid. This step keeps the dhokla moist and tasty.


Step 7: Garnish and Serve

Garnish with chopped coriander leaves and grated coconut.

Serve fresh with green chutney or sweet tamarind chutney.
